In addition to patios, African beds are also used for drying, and time-consuming sun-drying maximizes the terroir fostered by the land's soil and climate. It is a proven performer, consistently receiving high ratings in the Cup of Excellence, placing 9th in 2008, 5th in 2011, and 12th in 2024. Furthermore, it employs the rare Reposado (cherry resting) process, where the pulp is not removed immediately after harvesting, and the cherries are left to rest for several days.
