La Lia processing plant, located in Tarrazú, one of Costa Rica's leading production areas, is dedicated to specialty coffee. Named after owner Luis's mother, this mill has carefully processed only coffee from his five farms since its establishment in 2007. Although small in scale, it is adjacent to the farms and equipped with the latest facilities, allowing for meticulous washing and thorough sorting. In addition to patios, African beds are also used for drying, and time-consuming sun-drying maximizes the terroir fostered by the land's soil and climate. It is a proven performer, consistently receiving high ratings in the Cup of Excellence, placing 9th in 2008, 5th in 2011, and 12th in 2024. Furthermore, it employs the rare Reposado (cherry resting) process, where the pulp is not removed immediately after harvesting, and the cherries are left to rest for several days. This special lot, available only for a limited time, combines a vibrant aroma reminiscent of orange, peach, and lychee with concentrated sweetness and a smooth texture.

Best time to drink
After coffee beans are roasted, their flavor slowly matures.
You can enjoy the freshness of freshly roasted food, but the deliciousness is still trapped along with the carbon dioxide gas (carbon dioxide) generated during roasting.
The best time to drink Roastery Manly Coffee is from 5 days to 1 month, depending on the coffee bean. The flavor will slowly subside after 1 to 2 months, but you can still enjoy drinking it. Please enjoy the change in taste as time passes.
