"フィンカ デボラ" 農園主のジャミソン・サベージさんがつくる
唯一無二のコーヒーは競技会を目指す人にとって特別なコーヒーです。
数々のバリスタやブリューワーがジャミソンさんのコーヒーを使い
世界大会で優勝や入賞が果たされています。
デボラ農園はパナマのボルカン生産地区の
1,900メートル以上の高地に位置しています。
この土地はあまりにも高地で種子を上手く発芽することが難しく、
発芽は標高1,200メートルにあるジャミソンさんの自宅で行い、
10ヶ月ほど育ててから農園に運ばれ、
有機肥料で土壌が整えられた場所に一本一本植えられます。
標高が高いためデボラ農園での木々の生育には時間がかかります。
しかし、昼夜の激しい寒暖差こそコーヒーチェリーをゆっくりと成熟させ、
硬く糖度の高い美味しいコーヒー作りの秘訣なのです。
また、厳密な品質管理を行い、恵まれた環境で育ったコーヒーチェリーの
ポテンシャルを最大限に活かしています。
収穫のタイミングは糖度を測定して判断、精選方法を多様化し、
3段式のアフリカンベッドで念入りな乾燥を行い、
倉庫で十分に熟成をさせてから脱穀して真空包装で輸出をしています。
このコーヒーはTerroirと呼ばれるGeisha Washedのコーヒーです。

テロワールの精選はBRIX21-24と測定された完熟ゲイシャチェリーのみが収穫され、
3段式のアフリカンベッドで乾燥作業が行われます。
まず最初は一番乾きが良い上の段で毎30分ごとにかき混ぜられながら乾燥され、
次に2段目に移動され、最後に3段目とコーヒーが水分11％になるまで乾燥されます。
ウォッシュドコーヒーは乾燥するのに約12~15日ほどかかります。
テロワールと人の手仕事、そのすべてが結晶した、特別なコーヒーです。
このコーヒーを飲んで一番驚いたのが、味わいのふくよかさ。
とてもふくよかで口の中をまるく、やさしく、包み込まれるような感覚。
それから綺麗なゲイシャらしいジャスミンやレモンのフレーバー、
黄桃のような甘さとベルガモットの軽やかさ。
そして素晴らしいのが長く長く続く余韻。

Best time to drink
After coffee beans are roasted, their flavor slowly matures.
You can enjoy the freshness of freshly roasted food, but the deliciousness is still trapped along with the carbon dioxide gas (carbon dioxide) generated during roasting.
The best time to drink Roastery Manly Coffee is from 5 days to 1 month, depending on the coffee bean. The flavor will slowly subside after 1 to 2 months, but you can still enjoy drinking it. Please enjoy the change in taste as time passes.
